Good morning, or is it? What IS going on in the world?! Life is getting stranger by the day. I’ve been doing the grocery shopping for my household as well as my parents. Life is scary, shelves and freezers at the stores are empty.

Coronavirus Update

Time is blurring together! I find myself alternating between cooking and being glued to the TV to watch the continuous news updates. I also constantly make lists of potential items to find at the store next time I go.

I wear masks and gloves at the store and I undress and shower as soon as I walk in my front door. Maybe it’s overboard but everything going on feels so surreal, scary and unknown that I’m just trying to do what’s right for me.  

I’m going through all my cabinets to take inventory and I’m also stocking up on toilet paper because that’s what everyone is doing.

My husband has been home from work for two weeks now. He used to commute from Connecticut into NYC and we have no idea how long he’ll be home for which is so bizarre. I’m thankful we’re not living in the city right now because our friends feel so confined to their apartments and they’re going stir crazy. I’m so thankful for our backyard and I practically live out there now.

There is a lot of uncertainty for us and for the world and for now, the focus is just keeping my family, our friends and neighbors and our community as safe as possible.

Smoked Salmon Egg Sandwich

My emotions are pouring over and I really just came on here to brag about this incredible breakfast sandwich. Hopefully inspire you to make it too!

This sandwich is an elevated version of the simple egg and cheese on an English muffin. I use smoked salmon, sauteed fresh spinach and sharp provolone cheese to bring it to the next level.

Yield: 1 egg sandwich

Egg Sandwich with Smoked Salmon

The classic egg sandwich on an English muffin gets an upgrade with fresh sauteed spinach and smoked salmon.

Ingredients

  • 1 English muffin
  • 1 tbsp butter
  • 1 egg
  • 2 slices of smoked salmon
  • 1 handful of fresh spinach leaves
  • 1 slice cheese, I used provolone but choose your preferred cheese or omit
  • salt, pepper and dried parsley to taste

Instructions

  1. Melt butter in a medium-sized pan over medium high heat. Once butter begins to bubble add spinach leaves. Stir spinach leaves around in the pan to coat them in butter.
  2. Scoot spinach leaves to one side of pan and crack egg into pan. Break yolk with spatula and season egg and spinach with salt, pepper and dried parsley. Move spinach around on its designated side for even heat distribution.
  3. Place English muffin in toaster.
  4. After 2 minutes, flip egg. Place cheese on top of egg, then pile cooked spinach leaves on top of cheese. Turn heat to low.
  5. To assemble sandwich, top one half of the English muffin with egg/cheese/spinach stack, then with smoked salmon, then other half of English muffin.

Notes

Excellent with Cholula hot sauce.
