Crafting your own cocktail is the name of the game now that we’re a few weeks into the Coronavirus lock down. And today I’m reminiscing a raspberry sour cocktail I once had in San Francisco.
If like was normal and lockdown wasn’t a thing, tonight I would feel like heading to Angelshare in NYC to sip a foamy cocktail. You know… and perhaps see other humans. Or pretend there’s no out of control virus on the loose. But for now, I’ll spend my time learning how to concoct the craft cocktails I long for.
Raspberry Sour
A traditional sour is typically comprised of liquor, lemon juice, simple syrup and sometimes an egg white. For this particular drink I’m using my homemade raspberry-infused vodka for this fruity vodka sour. The infused raspberry vodka has become such a brilliant deep cherry color. Turning into a sour shaken with the egg white has even turned it a light creamy pink. It’s so fitting that Easter and pastel season is upon us!
It might be an unpopular opinion but for me there are few things more satisfying than the first sip of a foamy, silky egg white cocktail. I know not everyone is running to add raw egg whites to their cocktails… and, I get it. It took me a while to and embrace the idea too.
However, after Brad coaxed me into taking a sip of his one night in San Fran, and I was sold. The raspberry sour is was my introduction to my beloved cocktail, so I’m beginning with that here on The Food Quest.
Egg White Cocktails, Made Vegan
Don’t worry though, if the idea of egg in your cocktail seems gross, you can “cheat” by making it vegan. I say cheat but really, 50/50 I prefer it the vegan way.
The trick? Replace an egg white in cocktail recipes with 3/4oz of aquafaba – water from a can of chickpeas. Aquafaba can last up to about 4 days if kept refrigerated in an airtight container.
Aquafaba really surprised me. It perfectly mimicked the texture of an egg white and didn’t add any strange tastes. Dare I say think sometimes I like it even more than egg whites?
Pro tip: use a food scale rather than a shot glass to measure your liquids.
To make a vegan version, replace the egg white with 3/4oz of Aquafaba (liquid from the can of chickpeas). It adds the same sweet velvety foam layer to head of this dreamy pink cocktail! Raspberry Sour Cocktail Recipe
