Today I craved French toast from my favorite place to get it – Café Triskell in Astoria, Queens. But with Coronavirus, it’s currently difficult to leave my house and impossible to dine out (for those living close by, support Chef Phillipe by ordering online!)

Luckily I have happen to have a loaf of pre-sliced Brioche from Trader Joe’s on hand that’s been in my freezer for about two months. And, getting through the apocalypse means eating through your freezer…

Homemade French toast is such an easy way to impress a crowd. It’s breakfast, but a little extra fancy. Sometimes I make it just to treat myself to a nice breakfast – even on a weekday – since I can make it from start to finish in about 10 minutes.

Any bread can be used for this recipe, but I recommend Brioche if possible. The bread is so airy that it keeps the French toast’s light and crisp.

There’s nothing more satisfying than a paper-thin crust that gives way to a soft, airy and slightly chewy center.

Easy Brioche French Toast

An easy classic French Toast recipe that takes less than 15 minutes from start to plate.

Cook Time 7 minutes
Total Time 15 minutes

Ingredients

  • 6 slices of Brioche bread (preferred), but other bread works well too
  • 2 eggs
  • 2/3 cup milk
  • 1 tsp white sugar
  • 1 tsp vanilla extract
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • Pinch of salt
  • 3 tbsp salted butter

Instructions

  1. In a large bowl whisk together the eggs, milk, sugar,
    vanilla, nutmeg cinnamon and salt.
  2. Heat a large pan over high heat and add 1 tbsp of butter.
  3. Dunk one slice of bread into the egg mixture, and flip to make sure both sides are covered in egg.
  4. When butter is melted and foamy, add two egg-drenched slices of bread to the pan at a time.
  5. Flip after two minutes or once a nice toasted crust has formed, and lower heat to medium-high. 
  6. Cook for 1 – 2 minutes longer until browned.
  7. Repeat steps until you run out of ingredients – you should be able to get about 6 slices of French toast total depending on bread thickness.
  8. Serve with desired toppings. I like more butter, maple syrup and a sprinkle of powdered sugar. I love to have mine with a side of sliced bananas and fresh berries.
